When it comes to Italy, pasta and pizza are the first to come to mind. You will love this square and stuffed pasta, known as cheese ravioli, and Ravioli in Italians. You will not be able to get enough of the food even if it takes a little effort to make it. Let’s take you to the kitchen.

Ingredients For The Ricotta Cheese Ravioli Recipe

Materials

  • 2 eggs
  • 2 cups flour
  • Half a tablespoon of olive oil

For internal mortar

  • 200 g ricotta cheese
  • 1 ~ 2 sprigs of finely chopped fresh basil
  • Salt
  • Black pepper

For the above

  • 1 egg white
  • 1 ~ 2 sprigs of fresh basil
  • 2 tablespoons of olive oil
  • 2 cloves of garlic
  • Cherry tomatoes

How to Make Ravioli with Ricotta Cheese?

  • Mix and knead the ingredients required for the dough in a deep bowl. (If you have trouble picking up the dough, you can add 1 tablespoon of water). Cover the dough and let it rest for 30 minutes.
  • In the meantime, prepare the cheese mortar. In a bowl, mix the ricotta cheese, chopped fresh basil and spices.
  • Divide the dough into three and roll it. Sprinkle a little flour and open it with a roller. Spread egg white on it.
  • Take a dessert spoon from the mortar and transfer it to the half of the dough. Cover the other half. Cut it into squares with a serrated knife.
  • Boil enough water in the pot. Put the ravioli you have prepared in a pot and boil for 4-5 minutes. Add olive oil and finely chopped garlic in a separate pan and saute.
  • Add the boiled ravioli to the pan and saute for 3-4 minutes. Close to the heat, add basil leaves, cut cherry tomatoes on it and mix.
  • Optionally, you can get a new aroma by adding pesto sauce on the cheese mixture. You can serve cheese ravioli  with potato salad to enjoy it and enhance your table.

What are the Tricks of Ricotta Cheese Ravioli?

  • When rolling the ravioli dough, focus on the egg yolk instead of using a whole egg. In order for the dough to knead without adding water, it must have a firm consistency.
  • You can sauté the boiled ravioli pasta in butter to increase its flavor.
  • To make the dough smooth, you can shape it using pasta machines.
  • To prevent the dough from sticking to each other, you can add 2 drops of lemon and olive oil after the water boils.

Mushroom Ravioli Recipe

For the dough: 

  • One and a half cups of flour
  • 2 eggs
  • 1 tea spoon of salt

For the mortar: 

  • 200 grams of mushrooms
  • 1 tablespoon of olive oil
  • 1 teaspoon of salt
  • For the lemon  cream :
  • Juice of 1 lemon
  • Grated zest of 1 lemon
  • 1 can of cream

Knead the flour, eggs and salt for 6-7 minutes. Divide the dough into two and roll each piece thinly with the help of a roller so that it will not be torn. Frequent flour and avoid sticking. For the mortar, roast the chopped mushrooms in olive oil. Adjust the salt and take it from the heat. Take a tablespoon of the mortar and place it on the first dough at intervals.

Cover the second dough and press it lightly. Cut it with a shape you want and flour it so that it does not stick. Put it on a tray, cover it and let it rest for 10 minutes. Boil for 4 minutes in boiling water with salt and remove from the stove. Drain the water and place it on a serving plate. For the lemon cream, bring the cream, lemon juice and grated lemon peel to a boil. Pour warm sauce over ravioli and serve.

  • 100 grams of cheese ravioli with ricotta cheese is about 75 calories. There are an average of 490 calories in a serving. In order to reduce the amount of calories, you can reduce the amount of dough in a measured way and give weight to vegetables.
